Preparation

  • 1 ½ tablespoons of extra virgin olive oil. 
  • 1 tablespoon of garlic minced or grated
  • ½ to ¾ teaspoon of paprika or red chilli powder. 
  • 1 teaspoon of cumin powder. 
  • 1 teaspoon of ground coriander. 
  • â…“ to ½ teaspoon of ground cardamon or all pieces. 
  • ¼ teaspoon of ground cinnamon. 
  • ¼ to ½ teaspoon of crushed black pepper.

  • ½ teaspoon of salt. 
  • 2 tablespoons of Greek yogurt. 
  • 1 ½ teaspoon of lemon juice. 
  • Now, you have to mix all the ingredients and add 2 tablespoons of Greek yoghurt. 
  • Add the lemon juice to give a slight tang. 
  • I use approxx. 1.5 tsp and mix everything well and taste test to simply adjust the salt and spices. 
  • You can also be able to adjust the spice level to your taste. 
  • Simply marinate the chicken properly and the marinade needs to be thick and not runny. 
  • You are required to cover and refrigerate it for approxx. 12 hours to 24 hours. 
  • The longer resting time will impart better flavour and keep the chicken tender. 

Grill Chicken Shawarma

  • If you have a grill pan then go ahead and use it. 
  • Turn on the flame to the highest and heat a nonstick pan with half a tbsp of oil. 
  • When the pen becomes hot place the chicken pieces separately with the out crowding. 
  • Turn them from all sides for even cooking. 
  • You need to note that I grill the 250 to 300 grams of chicken in 2 batches and don’t crowd the pan and chicken will start releasing the mixture if crowded. 
  • When the marination begins to caramelize you need to put the flame to the medium-high. 
  • Simply continue to cook it until the marinade wild dries up completely and the chicken is cooked properly. 
  • As the chicken is marinated properly in the yoghurt, it will cook in a fast manner. 
  • You need to control the flame as it may char the meat it make it hard. 
  • Switch off the stove for a while and cut the chicken further with the wooden spoon. 
  • Cook it for more than 2 minutes to ensure that the chicken is cooked well. 
  • Simply set the chicken aside and add the quartered layers of separated onions and also the quartered deseeded tomatoes to the pan or toss for some mins on the high flame.
